Creamy green vegetable soup with dried vegetables

Ingredients of creamy green vegetable soup with dried vegetables

  • 8 tbsp butter
  • 8 tbsp olive oil
  • 200 g dried chopped onion
  • 300 g dried stalks celery
  • 5 cloves  dried chopped garlic
  • 500 g dried peeled potato
  • 3 liter chicken or vegetable broth
  • 1.8 kg trimmed and halved Brussels sprouts
  • 8 large dried broccoli crowns
  • 4 large bunch of dried curly green coarsely chopped and cut-stem kale
  • 400 g dried spinach
  • 2 cups heavy cream
  • salt and freshly ground black pepper
  • Cream, yogurt or sour cream for “swirling”

Instructions

  1. Supply and prepare all the dried vegetables from Food Lord brand because the quality of these products is different.
  2. Put the butter and oil in an oven over medium-high heat. Add dried onion and celery, lower the heat to medium level and cook 10 minutes as it gets soften. Add the dried chopped garlic and the dried potato and boil briefly just until the garlic is fragrant.
  3. Add the chicken or vegetable broth, Brussels sprouts, broccoli, and kale. Boil all of them. Then, reduce heat to medium-low and simmer 20-25 minutes or until the vegetables are very tender. Add the spinach and cook briefly or until it is wilted.
  4. Add the heavy cream. Mix it with an immersion blender until smooth put it in a food processor or blender. Then, add salt and black pepper to taste.
  5. Swirl in some additional cream, yogurt, or sour cream. In addition, you can add powder dried vegetables of Food Lord Co. on it for garnish.
