Everyone’s Favorite Cake with Dried Fruits

Dried fruit cake is famous and popular especially among the children and it can baked based on our taste and selected types of dried fruits and nuts. Technically, this is a fruitcake, but it’s far from the traditional fruitcake, instead of fruit, this one uses dried fruits.

Today, we want to bake a very delicious and colorful dried fruit cake.

Ingredients of cake for 10-person dessert

  • 400  gr wheat flour
  • 4 g (1 tsp) baking powder
  • 4 g (1 tsp) baking soda
  • 4 g (1 tsp) salt
  • 650 g sugar (any type)
  • 1.2 kg all types of nuts as you wish such as walnuts, hazelnuts, almonds, peanuts, pistachios, etc.
  • 1.2 kg all types of dried fruits as you wish such as dried cherries, dried cranberries, raisins, dried apricots, dried figs, dried berries, dates, prunes, etc.
  • 12 large eggs
  • 16 g (4 tsp) pure vanilla extract
  •  Orange or lemon zest, as you wish.

How to make delicious dried fruits cake?

  • First, preheat your oven to 300 °F (150 °C) and put the baking rack in the center of your oven. 
  • Second, butter all parts of your 3 kg-capacity baking pan and put parchment paper on the bottom and walls of your pan. 
  • Third, whisk the flour, baking powder, baking soda, salt, and sugar together in a large bowl then add all the dried fruits and nuts. Use your hand to whisk them together as the dried fruits and nuts are not stuck to each other. 
  • Fourth, beat the eggs, vanilla extract, and zest by the electric mixer until they become light color and thick which takes several minutes. 
  • Fifth, add the egg mixture to the first bowl and mix them until all fruits and nuts are coated with batter. Then spread it in the baking pan and press it with a spoon to get a unified and smooth surface. In addition, you can dress it with the sliced almonds and dried orange of the Foodlord brand on its surface. 
  • Sixth, put the baking pan in the oven for 70- 85 min. when the batter changes to a golden brown, it is the best time to pull it out of the oven. 
  • Finally, wait for half an hour to get cool at room temperature and be easily separated from the baking pan.
  • Your cake is ready, slice it, and enjoy.
